Our Dinner Menu this Week:
Monday: Low-fat Chicken Fettuccini Alfredo with added broccoli (from Kraft Foods website)
Tuesday: Turkey Chili with fritos and cornbread (not the healthiest sides, but oh well) - this is my sister's recipe and I've never tried it, but have heard it's yummy
1 package ground turkey
2 cans black beans
1 can of your favorite brand Salsa
1 can tomatoes
1 tablespoon chili powder
chopped onions (optional)
Cook the turkey meat. Add the remaining ingredients and bring to a boil. Reduce heat to low and simmer for 20 mins. Top with shredded cheese.
Wednesday: Baked Chicken Strips with baked potatoes and green beans
The chicken strips are great because the ingredients are all pretty much staples; I love dipping mine in honey - yum!
1/4 cup grated parmesan
1/3 cup flour
1/3 cup bread crumbs
1/2 tsp. salt
1/2 tsp. sugar
dash of thyme, paprika, & lemon pepper
6 TBS butter, melted
chicken tenders or breasts cut into nuggets
*Melt butter in pie dish
*Stir dry ingredients in another pie dish
*Dip chicken into butter, then dry ingredients
*Arrange on a cookie sheet and bake at 425 for 20-25 minutes (I flip halfway through)
Thursday: Tacos - I buy the El Paso Hard and Soft taco dinner kit

I LOVE that you are doing this. I cook most nights of the week but I am a horrible planner. No pressure but it would really help me out if you do this weekly. We'll just have what you are having! How are you feeling?

wow! I am really impressed. I am the worst housewife. I think I have probably cooked 4 meals in my life... so pathetic. One of my goals for 2009 is to learn how to cook and do it more often! You have just inspired me.
Also, I just read your comment. Reid is so cute! I think Eleanor and he have a connection because Eleanor was going to be Reid if she were a boy... definite chemistry between the 2 of them!
So fun! That's what I do too...4 recipes a week, but I've never thought to put them on here :) It definitely helps with my grocery shopping and motivating me to be good and cook :) I will definitely be stealing some of your ideas!
This is a fantastic idea! I'm home sick today, so my man is heading to the grocery store for me when he picks up Hayden from school, and I just emailed him our list for the week...I just might have to copy your idea!!! :)

Yum! Those all sound so good! Thank you for sharing . I'm definitely not adventurous when it comes to cooking, but those sound so easy to try.
