Ritz Cracker Chicken

Here is the recipe for the Ritz Cracker Chicken meal that we ate last night (it's really called Poppy Seed chicken, but I don't add any poppy seeds) If you make it, let me know what you think!

*Cooked chicken (I like to buy the Rotisserie chicken at the store the day that I make this, and it's already cooked and seasoned. You can also just boil chicken breasts and season them how you like it)
*8 oz. sour cream (I use the light)
*can of cream of ckn. soup - I use the 98% fat free
*1 cup ckn. broth or the water you boiled the chicken in
*2 sleeves of Ritz crackers, crushed in a ziplock bag
*1 stick margarine, melted

Combine sour cream and soup in a 13x9 pan (I like to use a slightly smaller casserole dish so that the "filling" is thicker). Shred the chicken into the creamed mixture and mix together. Add about a cup of broth - I use less than a cup because we like ours less watery- and mix all together. If you wanted to add poppy seeds, do so now. Cover the mixture with the crushed crackers. Drizzle the margarine on top of crackers. Bake at 350 for about 30 minutes, or until crackers are toasty brown.

Yum! I'm having the leftovers for lunch today, and I don't do leftovers, but I love this one so much! I serve this with a good salad (bagged lettuce, cut up carrots, broccoli, red onion, cheese, grape tomatoes) and sweet potato fries, which is another side dish that is EASY, and HEALTHY. (Just cut up sweet potatoes in slices, toss them in a bowl with some olive oil and Tony Satcheres seasoning or whatever seasoning you like, and put them on a jelly roll pan and bake at 425 for about 30 minutes, flipping once.)

I LOVE poppyseed chicken casserole--it would be great even without the poppyseeds! I'll definitely have to make the sweet potato fries with it next time. Great way to add vegetables!

This recipe sounds delicious! I can't wait to try it out. And I am still way impressed with your marathon training. 5 miles is great! I do 4, but I certainly can't run the entire time! I am the run a few laps, walk a few laps girl. I loved your day in the life! Those are great. It gives me insight as to how being a stay at home mom will be someday! Keep up the cute blog posts! :-)

That sounds delish. I'm trying it next week. I make sweet potato fries too. I roast them with olive oil and garlic. They are yummy! I like them better than regular fries. Thanks for posting a recipe. That is really fun and I can't wait to try it.

Hey, I made the Ritz Cracker Chicken tonight and it was a hit. My brother said it taste like chicken pot pie and we should add some veggies to it so maybe I will try that for a new twist (o:
