Menu and (early) 12 week Appt.

We had the 12 week appointment today and everything sounded great! We got to hear the baby's heartbeat which is always a relief! It's about 150, which is around what Reid was. I've gained 5 pounds, which is more than what I wanted, but I shouldn't be surprised with the way I've been eating lately! Just not watching it at all which is unlike me. My goal is to gain around 25 pounds (I gained 25 with Reid) so I'm really hoping to stick to that!!!! We have our sono appointment on Friday with the perinatologist so I'm just crossing my fingers that he will be able to tell the gender. If you can, would you say a little prayer that everything looks ok with the baby? I'm more nervous second go-around!!

Here's our menu for the week:

Monday: Spaghetti with meat sauce (with some hidden pureed butternut squash - I'll let you know if it remains "hidden")

Tuesday: Black Bean chicken, the Good Rice, and broccoli

Black Bean Chicken
*4 chicken breasts
*2 cans black beans, semi drained
*4 slices pepper jack cheese
*cumin and paprika
Spray baking dish with pam. Put chicken in dish and sprinkle with paprika and cumin. Place cheese slices on top of each breast. Pour black beans on top. Cover and bake at 350 for about 50 mins to an hour.
Good Rice (OH SO DELICIOUS)
*1 can beef broth
*1 can french onion soup (Campbells)
*3/4 can water
*1 1/2 cups Uncle Ben's uncooked, converted rice
*1 stick margarine
Melt margarine in a 13x9 dish. Add rice, soups, and water. Stir. Bake at 350 for an hour, or until the moisture is absorbed.
Wednesday: Tator Tot Casserole (I've posted this before, but I found a different recipe for this and it has some veggies in it. I put the veggies on half because Matt won't eat the veggies!)
Tator Tot Casserole
1 lb ground beef
1 small onion, finely chopped (optional)
1 can cream of mushroom soup
1/4 cup milk
1 cup frozen mixed vegetables
1 cup shredded cheddar cheese
1 lb. frozen tator tots
Preheat oven to 375. Brown meat with onions in skillet; drain. Spoon into 8 inch square baking dish. Mix soup and milk; add to beef; stir together. Top with layers of mixed vegetables, cheese, and tots. Bake 45 mins. or until tots are golden brown and casserole is heated through.
Thursday: Pork Shoulder with baked potatoes, cornbread, and veggie (Matt will have leftovers on Saturday night when I'm out)

Pork Shoulder
3-4 pound shoulder pork
18 oz. bottle barbecue sauce
1 can coke
Put pork, coke and sauce in crock pot. Cook on low for 7-9 hours (depends on crock pot - mine is usually done after 7 hours)
Friday: Probably pizza, our normal Friday night dinner
Saturday: Matt will eat leftover pork shoulder, and I'll be livin' it up at a bachelorette party! Because you know how pregnant girls like to party - a little dinner, and then back early to the hotel to enjoy a night away from having to be woken the next morning by a little one!

Yeah for Baby# 2!!! Exciting! Glad you are entering the feel better portion of the pregnancy!!! Also I love that youpost your recipes, I have used some of them!

Thanks for the menu ideas. I am on a roll cooking and your ideas are helping out. The hardest part is coming up with new things.

So glad all was well at your appt. We LOVE black bean chicken at our house. The one thing I do different, which gives it a little spice, is to sprinkle Tony Chachere's Original Creole Seasoning instead of the paprika & cumin. So Yummy!
