Our Menu for the week:
Sunday: Matt is grilling hamburgers and I'm making sweet potato fries
**I have the hardest time making sweet potato fries - I try something different everytime to make them crisp and not soggy. I have found that use just a little olive oil, bake at 425, cook for about 30-35 minutes, flip after 15 minutes, and then flip back again when there's just about 5 minutes left. Normally what happens is Matt and I throw out the complete burnt ones and fight over the good ones! Ha! If anybody has any good tips to making sweet potato fries, please pass along!!**
Monday: Cheesy Chicken and Rice Casserole
Tuesday: Bubble Pizza
Wednesday: Cream Cheese Crock Pot Chicken (I've revised this on my blog, slightly) I'll serve with noodles since we are having rice on Tuesday night. (I've also revised the Ritz Cracker Chicken recipe)
Thursday: Mom's Night Out!!!! Can't wait!!!!
Friday/Saturday - Not sure, but if I actually cook, I'll post the recipes and let you know!

How do you make your sweet potato fries? I've tried a few times, but some will burn while others are soggy.
I absolutely love your menus. Keep them coming! :) Also, I used to make the sweet potato fries myself but then I found that whole food actually has some in the frozen section that are really good. I just usually add some olive oil and seasoning salt and bake them.
I have had the same problem with the homemade fries thing, so you might want to try this:
Slice then up, then pop them in the microwave under a moist paper towel until they are tender. Season them up, place them on a baking sheet & THEN broil them for about 10 minuutes, skin side down, until thy are browning on the sides.
That has ended up working for me!
Hey Mere - I know we have both compared our sweet potato fries recipe a few times before - but the way I get mine crisp is to bake for 30-40 minutes, and then the last 5/7 minutes broil them. It will help get them crisp! Another great tip is to use Garlic Olive Oil vs regular olive oil - it gives them a little bit more flavor! :)
