How to Spend an Ice Day

Bake cookies with your toddler until he becomes bored and then mom finishes while toddler colors! recipe at bottom


Step One: Hide in the pantry while Momma tries to get out all of the supplies.


Step Two: Assemble supplies on counter. Although, I just realized, as I was typing the recipe, that I totally did not use a whole stick of butter! Oops, I just did 1/2 a stick! They were good, but would have been awesome had they had the rest of the butter!

Step Three: Pour ingredients and mix batter.

Step Four: Color while Momma finishes.

Step Five: Drop dough on cookie sheet that obviously needs to be replaced with a new one.



Step Six: Wish the cookies would bake faster.

Step Seven: Enjoy your creation! Make sure to lick the evidence off your fingers!

A+ Cookies

Yields 3 dozen

3 large eggs

1 cup light brown sugar, firmly packed

1 cup sugar

2 tsp. vanilla extract

2 tsp. baking soda

1 stick unsalted butter, at room temperature

1 1/2 cups chunky or smooth peanut butter

4 1/2 cups rolled oats

1/2 pound semi-sweet chocolate chips

1/2 pound M&Ms, peanut or plain

Preheat oven to 350 degrees. Whisk eggs in a large bowl. Add sugars, vanilla, baking soda, butter, and peanut butter, one at a time, blending well after each addition. Stir in oats, chocolate chips, and M&Ms until well blended. Form large tablespoons of dough into balls. Place on an ungreased baking sheet 4 inches apart. Bake 12-15 minutes. Do not overbake. Cool on wire racks.
